Quinoa Black Bean Patty and Butternut Squash Fries

OK! So seriously… these fries have been part of every meal I have made for the past three days! They are so good! If you have ever had Zaxby’s french fries and tasted their seasoning…thats what I imitated!;)

And as for the Black Bean and Quinoa patty….I made the recipe up all on my own! No help whats-so-ever! Its protein packed, too!

So, without further adieu…here is the recipe!

FOR THE BUTTERNUT SQUASH FRIES

you will need…

  • 10 oz butternut squash, cut into steak size “fries”
  • a cookie sheet
  • Paprika
  • Garlic powder
  • salt
  • pepper

Step 1

Coat your cookie sheet with pam, or oil so the fries dont stick! Preheat your oven to 425!

While the oven is preheating, place the “fries” on the pan.

Step 2

Once all the fries are on the cookie sheet, sprinkle paprika, salt, and a teeny bit of pepper on them! Salt and Paprika are the real kickers for this recipe!

Sprinkle on a teeeeennnnneeeyyyyyy tiiinnnyyyyy bit of garlic powder! That stuff is packin’ so be careful!

Step 3

Place your seasoned “fries” in the preheated oven for 40 mins, flipping over half way. This is important, so they don’t burn and get crispy! For my oven it only takes 30 mins, so just watch for them to get golden!

Step 4

Take the bad boys out, and enjoy your creation. You sexy healthy being you!

Oh… did I mention… these are only 130 calories! Just sayin’ ;).

 

FOR THE QUINOA BLACK BEAN PATTY

you will need….

  • 1/2 cup of black beans
  • 1/2 cup quinoa
  • 1 egg white
  • salt
  • pepper
  • oregano
  • paprika
  • galric
  • onion

Note: This recipe makes 2 patties!

Step 1

Drain the black beans, and mash them up, I used a fork to accomplish this, considering I don’t have a food processor as of yet!

Step 2

add quinoa and the egg, mix it alllll up!

Step 3

add all the spices; I eyeball it, it depends on how much spice you want! I would go easy on the oregano! It can be really strong!

Step 4

cook those bad boys! Be careful, they can be crumbly, but if you coat the surface you are going to cook them on with non stick, you’ll be fine! I learned my lesson, lol!

patty weighs in at 122.5 calories!
